Dice the onion, ham, and green bell pepper. Cook the bell pepper and onion until soft in a little oil, and then add in the ham. Remove to a separate bowl. Grate the cheese and separate into two piles.

Whisk 3 of the eggs together with a heavy pinch of salt. Cook like an omelet. Then repeat with second half, being sure to split the filling evenly.
